Homemade Cottage Cheese

We had a LOT of milk in the fridge a while back and to make sure it didn't go bad we tried making cottage cheese! Here's the recipe I used.

½ cup buttermilk
1 gallon milk
¼ cup cream
salt and pepper to taste

  1. In a crockpot, stir the buttermilk into the milk. Use whole local milk here
  2. Let stand at room temperature until clabbered or curdled (about 12 to 18 hours). Cut the clabber into large cubes.
  3. Put back in the crock pot at 300 degrees until the whey separates from curds. Stir occasionally (it will take eight to 12 hours).
  4. Drain with a cheese cloth. Add enough cream to get the consistency that you like and then salt and pepper to taste.
 This is what it looked like BEFORE the cheese or cream cheese process! 
So, Pastor helped try this, it did NOTHING after all the time above. I do not recommend this recipe. We did however try to save what we had done and Pastor wanted to make "cheese" so he experimented and tried to make Mozzarella cheese, fail. I was still disappointed, but Pastor was determined to make something work out of it...and while I gave up and went to bed, Pastor stayed up and figured something out....he ended up making 16oz of cream cheese, which we then used to make a HOMEMADE Cheesecake. It was delicious! I was so excited we saved this milk and NOTHING went to waste! Hooray! Never give up, is the lesson learned here. 

 The DELICIOUS Cheesecake...It was so yummy. ALL from scratch!
