Strawberry Cake/Pie

Winco had an AWESOME deal on strawberries this past week...$1.48 for 2lbs! I've even thought about going back to get more.

So, as I was sitting here thinking, there's no way we can eat all this just by themselves. I thought I'd make a FRESH, from scratch, Strawberry Cake.

The recipe was from the Martha Stewart website.

 You'll need:
1 1/2 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 TBSP unsalted butter, softened
3/4 cup sugar, plus 1 tablespoon
1 large egg
1/2 cup buttermilk
1 tsp vanilla extract
1lb strawberries, halved or quartered

Preheat the oven to 350 degrees. Butter a 10in pie or tart pan (I used a 9.5 in pie pan, and it was just fine).

Whisk flour, baking powder, baking soda and salt together in a medium bowl. Set aside (NOTE: do not do this while on the phone and forget if you've added salt...I think mine had a little too much in it...whoops!).  
Combine butter and sugar in bowl with an electric mixer. Beat until light and fluffy, about 3 minutes.
 Mix in the egg, buttermilk and vanilla.
 Add flour and mix to combine without over mixing.

 Spread batter in the prepared dish.
 Arrange strawberries cut side down on top of the batter, gently pressing to partially submerge. Put in as many as you can (I should've put more in!)

 Bake in oven until top is light golden and a knife inserted in the cake comes out clean (about an hour).
Cool. Serve with whipped cream! Yum!
