Recipe Monday: Blueberry Zucchini Bread

Yes, more zucchini recipes. This bread recipe is now my go to zucchini bread recipe! Its easy and yummy. I think we like it the best because it has blueberries in it!

1 cup all purpose flour
1 cup whole wheat pastry flour
1/4 cup light brown sugar
1/4 cup granulated sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking powder
3 eggs
3/4 vegetable oil
1 tsp vanilla extract
2 cups shredded zucchini
1 cup blueberries

Preheat oven to 350 degrees. Lightly great 4 mini loaf pans.

In a large bowl, whisk together flours, sugars, baking soda, cinnamon, salt, and baking powder.

In a medium bowl, whisk together eggs, oil, and vanilla. Add this mixture to the flour mixture and stir until just combined. Gently stir in zucchini and then blueberries.

Spoon batter into pans. Bake for about 40 minutes. Loaves should be golden brown and a toothpick inserted near the center should come out clean. Cool in pan for 10 minutes. then remove from pan.
